just popping in

Hi everyone,
I am just popping in to say that I have been in bed all week with some sort of flu, high temps, coughing and a spinning head. 
The spinning head is the worst as I can't read, can't get up for long or concentrate on anything.
I am forcing myself out of bed this afternoon because life goes on and I am making a birthday cake for a very special lady in our family who will be 101 - yes that is one hundred and one years old on Saturday! 
I posted here last year when VCH's grandmother- or Great Nana as she is known by the children turned one hundred and now 1 year later we are blessed to be celebrating her 101st birthday- amazing!
I volunteered to do the cake because if I make it we can eat it. 
So I am making a gluten free, sugar free cake for us that is also nut free for our niece who has a nut allergy.
There will be 30 plus people attending the party at a local restaurant on Saturday and so I am doing a three layered cake.
The bottom is a chocolate mud cake, the middle layer will be an orange cake and the top I am doing a cherry coconut cake. 
The whole cake will be iced in chocolate ganache so I needed to make cakes that would taste good covered in chocolate.
I am then going to decorate with chocolate and fresh berries.

  2. Hey Deanne, sorry to hear you have been unwell :( A celebration may be just the thing to help you along the path to recovery - 101 is pretty inspirational!! Happy birthday to Great Nana and I hope you are feeling better soon!
