what's growing

It's been a while since I have posted about our vegetable gardens.
They are coming along nicely, we have lots of different veggies growing.

Some new laying hens who have started to provide us with a steady supply of eggs.

VCH thought he would grow some eggplant- I am not really sure why because he doesn't even like eggplant, but here it is growing and now I need to think of some way to cook it that VCH will eat it - any ideas are most welcome.

Lettuce is not doing well it is getting too hot for it so it might be time to plant them in pots in the shade- this worked well last year and we managed to have lettuce a fair way into the summer.

But come summer we should have some corn, tomatoes, some more carrots and lots of other yummy things.
It's lovely to be able to grow and eat your own produce, and I notice a saving on the fruit and veggie bill each week.

  2. Do you cook it first or put it on raw?

  3. Hi Deanne
Our recent Indian visitors showed us how to make a very yummy vegetable curry which used an eggplant along with lots of other veges. It was a hit even with those who "don't like" eggplant, and we have made it several times since (on the menu for tonight also). Must type up the recipe, could send it to you if you like.

  5. I'm not sure, I tried it at a restaraunt a few times, I would breifly steam it first.
P.S The pizza was a BBQ sauce and chicken one.

  6. Thanks I was thinking it might have been along the lines of char grilled vegetables ie capsicum, mushroom, tomato etc.
Though that sounds nice- I might have to try it next time we have pizza.
