Yes it is winter, yes it is cold, yes we had a frost this morning!
So to warm up we had this for breakfast.
I came across a recipe yesterday and immediately saved it to make.
Because I no longer buy commercial cereal and we don't have bread I have been on the lookout for some quick hot breakfast recipes as the kids are not liking fruit and yoghurt or a smoothie on cold winter's mornings, and while they like regular porridge they also like variety, so when I saw this I thought it was worth a try!
I woke up early and it was so cold I quickly made it up and popped it in the oven.
It was a hit!
The only thing I would change is to heat the milk up prior to serving as it cooled down really quickly once the cold milk was added.
You can also add some cooked fruit, but I thought we would try it plain to start with.
Ingredients to serve 8:
3 cups rolled oats
1 cup packed brown sugar- I used 1/2 C coconut sugar and 1/2C dextrose
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
4 egg whites
1 cup milk- I thought it looked a bit dry so added another 1/2C milk- glad I did!
1 tablespoon vegetable oil
2 teaspoons vanilla extract
Raisins, granola and other toppings (optional)
Additional milk for serving
Preheat oven to 180 C.
In large bowl, combine oats, sugar, baking powder, salt, cinnamon, egg whites, milk, oil and vanilla and mix well.
Pour into large greased baking dish.
Bake in preheated oven 25 to 30 minutes, or until center is firm and edges begin to brown.
Slice and serve warm with toppings and milk, as desired.
I hate using only one part of the egg as I usually forget to use the other part in something else, so next time I will either use 2 whole eggs or make a boiled custard with the yolks and serve that with it.
